According to legend, Zhu Yuanzhang became emperor in the early Ming Dynasty, so the whole country avoided saying pigs (Zhu). There was a rich man named Shen Wansan, because Shen Wansan's wealth was invincible to the country, Zhu Yuanzhang was very jealous, so he came to Shen Wansan's house as a guest, and Shen Wansan entertained Zhu Yuanzhang with pig's trotters. Zhu Yuanzhang deliberately embarrassed Shen Wansan after seeing it, and asked him how to eat this, because it was the whole hoof, not cut open, if Shen Wansan used a knife, then Zhu Yuanzhang could justifiably punish his sin (meaning killing pigs). However, Shen Wansan had a clever move, pulled out a thin bone from his hooves, and cut flesh with bone, solving Zhu Yuanzhang's problem and also having the traditional way of eating Wansan's hooves. Zhu Yuanzhang ate it and thought it was delicious, so he asked Shen Wansan what the name of this dish was, Shen Wansan thought that it could not be said that it was called pig's trotter, so he patted his thigh and said, This is Wansan's hoof, so Wansan's hoof got its name.
After hundreds of years of circulation, Wansan Hoof has become the main dish in the Zhouzhuang people's New Year's Festival and wedding banquet, and it is also a superior dish for entertaining guests.
