River eels are migratory fish that spawn and breed in the deep sea, grow up in fresh water, and return to the sea to spawn when they reach adulthood. Every spring, large numbers of young eels (also known as white calves, eel lines, eel seedlings) enter the river estuary from the sea in groups.
It takes months to swim from the deep sea to the mouth of the river, by which time the hair-sized eels have grown to 7-8 cm long and transparent lilac-sized. Fishermen with a fine mesh net casually fishing are full of pots, too much to do, take home the next strip.
In 1997 and 2000, due to the discharge of sewage from the tannery rented by the zhejiang people upstream, all the adult river eels in the whole basin died, and now the wild river eels have become very rare, and the eel seedlings are rare. Because Japan and South Korea like to eat river eels, many farms in their hometowns rely on the excellent local freshwater water quality to breed river eels for export. It is impossible to breed eel fry by hand, so now needle and thread-sized eel fry are now being harvested in large quantities not for eating, but are sold to river eel farms at high prices.

Grandma's family is called Nan'an Village, there is a big river called Xixi on the edge of the village, and the uncle in the village is a professional fisherman. Every time there was a flood, the uncle would tie a small funnel-shaped trawl with one end to a tree on the shore and the other to a stake in the river. In this way, the big fish near the shore will be washed into the net by the running water. Because of the flood, frogs, earthworms, insects, grass shrimp will crawl to the shore to rely on grass to reduce the impact of the river, and these are the favorite food of river eels, so river eels will also swim a lot on the shore. Saying that everyone may not believe it, just a small net, you can easily get 200-300 pounds of wild river eels in one night. Early the next morning, I took a tractor to Sell in Fu'an City, living for 7 cents a pound, and 3 cents a pound for dying, with a huge income of nearly 200 a day. A few days of flooding is basically a year's salary for employees, and the ecology and resources at that time are so good. The uncle fished alone, raised five children, and was the first person in the village to start a building.
When I was in junior high school, in the early 90s, the stream in Fuchun Park originated from Jiaoxi, the stream went down to Turtle Lake, and the water of Turtle Lake went down to Shatou Bay in South Lake, and the freshwater fish resources were still very explosive at that time. At that time, the supervision was not strict, and people often fried fish. Once I happened to be catching fish nearby, there was a loud noise, I ran over and saw the river turn yellow, and I knew that someone had used a detonator to fry fish in Sha Tau Bay. A small river bay, the river eel alone picked up 500 pounds, perch 20 pounds, ayu 5 pounds, and countless other catches are not valuable, fried fish is too late to catch at all. I picked up a bucket of grass shrimp, crucian carp, brook grouper, big horse mouth, peach blossom fish, brook loach loach on the shore. Big carp grass carp, some will have a dirty smell, no one wants, but the carp has a chance to survive. At that time, the large wild river eels could reach three or four pounds, most of them were too pounds, and now I dare not think about it!!!

Fu'an people have a simple approach, generally it is a stew.
Blanch the pale yellow river eel for 20 seconds with 70 degrees of water, let it lose its vitality, the surface mucus gelatinizes, and the hand holds the fish head to the tail and pulls the mucus completely clean. Take care of the river eel, cut the back, cut into segments, and connect the abdomen. The whole eel is plated in a large bowl with an appropriate amount of water, set aside some ginger slices, dried shiitake mushrooms, and stewed directly through the water. After half an hour, the eels are ripe, a layer of yellow oil on the soup water, adding half of the home-brewed old wine, sprinkling a few coarse salts, and the fragrance is overflowing. Wild river eel meat is tender and chewy, no small thorns, rich in oil, abnormal aroma, exceptionally nutritious, suitable for all ages.
Farmed river eels, grayish-white, taste better than most freshwater fish, but compared with wild ones, it is still one day a day. Now the Fu'an banquet is farmed, and I will eat a piece of it, but I am full of far-fetched memories of the pure beauty of wild river eels.
Now the fishermen in their hometown still have the opportunity to hit the wild river eel, but the pounds are less, 220 pounds below one pound, and 300 pounds of goods, which is very expensive!
I hope that there will be no more artificial discharge of sewage, and I hope that the population of river eels in my hometown will recover as soon as possible so that the delicacy can be restored.
