Bagua chicken is a traditional dish with the most ethnic characteristics in Hezhang, Northwest Guizhou. At first hearing this name, we may involuntarily think of "Yi Chuan" in "Yi Chuan" "Easy to have tai chi, is to give birth to two instruments." Two instruments give birth to four elephants, and four elephants give birth to gossip."
Maybe everyone is a little confused, obviously it is the name of the dish, how can it be associated with gossip?
It turned out that it was the most important sacrifice of the Yi people in Guizhou, and festivals, friendships, conspiracies, long-distance travel, diseases, wars, sacrifices, engagements, opening the light, rushing to the examination, going to the post, and many other matters had to be used to predict good fortune and misfortune, especially chicken bones. When the bagua is completed, people cook the food from the slaughtered chicken, and the bagua chicken gets its name. In the northwest region of Qianxi, as an ancient main ethnic group, the Yi people have many traditional rituals and customs that have deep cultural connotations. At the same time, it is also a delicious dish that integrates history and traditional food culture left to us by our ancestors.
In the traditional Yi culture, the fundamental connotation of "Bagua chicken" is to eat chicken meat to see chicken gua and measure good luck and bad luck.
"Looking at the chicken gua" is to use the chicken as a carrier to predict the success or failure of a certain thing, and this prediction method was mostly used in ancient times in wars, sacrifices and other occasions. Therefore, "looking at chicken gua" was first used in the upper class society of the Yi people, and later with the passage of time and social changes, this culture gradually spread to the middle and lower groups, so its connotation was enriched a lot, such as travel, hospitality and so on.
method
First, take a piece of red charcoal from the stove and put it on the ground, hold the chicken foot in your left hand, splash water on the charcoal with your right hand, and recite the chicken three times around the charcoal, chant, and then kill the chicken. After hair removal and washing, the chicken head, wings and legs are cut out according to the joints, and the rest is cut into pieces and simmered together until cooked. The Bagua chicken is simmered over a slow heat, with pure taste, fresh soup and tender meat.
Look at the chicken gua like this
Looking at the chicken gua is generally looking at the three gua, that is, the chicken head gua, the chicken wing gua and the chicken leg gua. Chicken head gua generally looks at whether there is a quarrel; chicken wing gua generally looks at fortune; chicken leg gua generally looks at auspiciousness. In the process of watching the gua, the master first prayed to the ancestral deity and then slaughtered it, which was called "Anjina" in the Yi language (Chinese transliteration) on the northwest side of Qianxi.
Looking at the chicken must first start from the chicken head. Looking at the chicken head gua Yi is called "Anou Guona", and looking at the chicken head gua is to look at the chicken's beak, that is, the mandible of the chicken. If you want to know something, then after some ceremonial activities, cook the chicken as usual, and carefully pull out the chicken's beak after the chicken is cooked, and when you see that the extension of the two ends of the chicken beak is complete and rolled inward in a clockwise direction into a very regular circle, this is the best guaxiang, implying that the object of prayer will not have quarrels in the future.
After looking at the chicken head gua, you have to look at the chicken wing gua. Look at the chicken wing Gua Yi language is called "Ang Du Luxury", this Gua gua as the name suggests is the chicken wing, is the section next to the chicken body. Chicken wing gua is also called chicken small gua. When looking at the chicken, first of all, the two bones that have eaten the meat are wiped clean and then watched, when you see that the bone oil in the bones is full and transparent, like a stacked azaleas, then it means that the object of the blessing will be blessed with good fortune.
After the chicken head gua and chicken wing gua are finished, then it is time to look at the chicken leg gua. Looking at the chicken leg Gua Yi language is called "Ann Complement", this "Ann Supplement" is the section where the upper part of the chicken thigh is connected to the body. Looking at the chicken leg gua is the same as looking at the chicken wing gua, or after eating the meat, look at the bones.
The inside of the chicken leg bone after eating the meat generally has a bone path, which is grooved, and there will be some small red dots in the groove, which are called "ba" in Yi. Of course, some of them do not have red dots, which is called auspicious and unpredictable. To see the chicken leg gua, you must look at both, the two red dots add up to three points is the upper gua, and the two points are also the upper gua, such a gua will bring auspicious peace to the object of blessing. Whenever this good gua bone is encountered, the object of prayer will happily collect the gua bone. If it is five o'clock, it is the next gua, when encountering the next gua, the object of the blessing will silently throw the chicken bone to the dog to eat, so that the omen can be cracked...
