As the name suggests, the first course is a refreshing and poetic starter. And this dish is actually related to the cave, inspired by the western Australian wonderland cave - Mirror Lake Cave (Lake Cave).
Hidden deep in the Kaoli Tree Forest in southwestern Western Australia, mirror lake caves are covered with 72 meters of greenery, and the stalactites inside are hanging upside down, which is even more mysterious in the reflection of the lake. The depths of the cave are quiet and tranquil, making people simple in an instant, and there are no worries.
Inspired by the simplicity and beauty of Jinghu Cave, Sophia chooses the simplest colors to present the starters , vibrant green.

1. Wash the spinach and blanch the water and finely cut it;
2. Lightly sauté the olive oil, add salt and garnish with sesame seeds;
3. Wash the squid and blanch the flowers;
4. Stir-fry the squid flowers, add salt, chili noodles and cumin powder;
5. Plate, clasp the spinach with both hands to make it bowl-shaped, use chopsticks to pull out a small hole and stuff the squid flowers.

Western Australia is home to nine distinctive wine regions, including the Margaret River and the Swan Valley, producing Cabernet Sauvignon, Cabernet Sauvignon blends and Chardonnay.

2. Absorb the surface water of cod and wrap the fillets with starch;
3. Heat the oil in a pan, add cod fillets and fry until golden brown on both sides;
4. Plate out of the pan and mix the sauce with Western Australian wine and lemon juice.

Sichuan-Chongqing meets Western Australia
The protagonist of this round is the famous rock lobster in Western Australia. They are temperate species belonging to the family of thorny lobsters, mostly living on the continental shelf between Perth and Geraldton, without the usual large pincers, and characterized by a thin shell and full flesh.
The rock lobster tour of Western Australia is not only on the tip of the tongue, tourists can also visit the lobster factory, understand the whole process of breeding, and even step into the seawater, personally go to the fishing, in the joy of harvest, experience the "Australian" style.

1. Wash the crayfish and soak in water dripping with a little vinegar;
2. Wash and chop the green onion, wash and slice the garlic, wash and shred the ginger, cut the dried pepper into fine strips and set aside;
3. Heat the pan, add the peppercorns, reduce the heat to slow frying, add the dried pepper shreds, change the color of the pepper shreds to change the heat, burst the ginger shreds, garlic slices, green onion white flavor;
4. Drain the crayfish, put them into a pot, cook the cooking wine, add soy sauce, salt and sugar and dry the sauce;
5. Add 1 bowl of boiling water to low heat and simmer slowly, after the soup is dried, change to high heat, add pepper and stir-fry well.
