I make cold dishes, and I prefer tofu skin, vermicelli, and cucumber. Protein and vitamins are available, the ingredients are simple, and the taste is good. Cook it, mix it and serve it on the table, which is delicious and trouble-free.

[specific method] 1, the vermicelli is soaked in cold water and soft, and it can be soaked in warm water in winter.
2. Blanch the soaked vermicelli in a pot under water for about half a minute, and then remove it with cold water after it is soft.
3. Then add the tofu skin, add 1~2 grams of baking soda, cook over high heat for 1 minute and remove it.
4. Similarly, rinse the tofu skin with cold water and drain the water.
5. I also prepared cucumbers and onions here, which were shredded separately.
6. Heat some oil in a pot, add white sesame seeds, dried chili peppers, and pepper powder and fry until fragrant. Then add light soy sauce and balsamic vinegar and stir-fry well, turn off the heat.
7. Put the tofu skin, vermicelli, cucumber and onion into a large bowl, then add some minced garlic, coriander, salt, sugar and sesame oil. Then pour in the fried chili oil seasoning and mix well.
The vermicelli and tofu skin are soft and flavorful, and the cucumber and onion are crisp and refreshing. Fresh and slightly spicy, cool and delicious.
