Jérôme Tauvron, who comes from a gastronomic family, seems destined to become a chef. His father was a famous chef in central France, and at a young age he followed his grandmother and father to learn various cooking techniques.

As an adult, he spent many years in Michelin-starred restaurants, including Les prés d'Eugénie, where he worked with 14 Michelin stars, but he was not satisfied with what he had achieved and decided to set up his own business.

At the age of 25, he travelled to Eurasia and came to London, where he opened his first restaurant, L'Etanger (The Outsider), in 2002. As the first "Japanese and French" restaurant, outsiders quickly took London by storm.

Madonna, Prince Harry, Emma Watson, Dustin Hoffman... They are regular customers of L'étranger and were named "Best Restaurant in London 2009/2010" by Good Food Guide.

After living in London for 18 years, Jérôme embarked on a new life challenge, entrusting the London restaurant to someone else, taking his wife, and returning to China with his Shanghai wife to become a Shanghai son-in-law.

Create restaurants as works of art and convey love with food

In their eight years in China, Jérôme Tauvron and his wife Angel have created three restaurants, each of which is famous, from the original cross-border cuisine SILEX, to the BLANCHE Benbai in the garden house on Wukang Road, to the new LUMIÈRES JéJé Light Collection.

Hidden inside Hang Lung Plaza, LUMIÈRES Jé JéJé's Collection of Light, which opened earlier this year, is not just a restaurant, but also an immersive theatrical work of art.

Designed by renowned architect Andy Martin, the entire space blends classical and modern theatre architecture.

The circular bar in the middle of the restaurant is inspired by the ancient Greek amphitheater, which represents the beginning of theatrical art. Before the 17th century, circular stages were the mainstay, allowing audiences to see performances from any angle. So you can sit anywhere in the restaurant and observe the show in the middle bar.

Around the circular bar, there are also many theatrical elements: the spiraling back of the booth is reminiscent of the spiral staircase common in modern theaters; The 14° fan-shaped table extends the amphitheater layout; The lamps between the seats combine electrical-era styling with Art Deco styles, echoing the curved edge of the booth.

When you walk through the restaurant and go inside, there are two hidden spaces, the backstage of the so-called "The Theatre", where the flow of light and shadow renders the ultimate romance.

The restaurant's private room, named "Éclore First Shell", corresponds to the name of the restaurant, LUMIÈRES JéJé The Collection of Light is taken from Plato's classic cave metaphor - because the light shines into the cave, people discover that darkness is not what the world really is, so as to get out of the cave and create real beauty.

The curved dining table, wall arc, and streamlined design in the private room are artistic restorations of this scene, and the bright light outside the window fills the entire space, giving people hope and longing.

The details are also properly cooked, such as natural pink onyx stone countertops, cashmere sofas that need to be cleaned by hand every day, rounded booths, tables and chairs, and gradient colors, making the theme of "light" more layered.

Jérôme doesn't like to be too conspicuous, so the restaurant's artwork and tableware, although seemingly low-key, actually have a lot of origins, such as the 125-year-old Orrefors crystal cup, the Raynaud butterfly coffee cup, the Little Tulip tulip chair, J.L. Coquet porcelain... The temperament is elegant and moving.

LUMIÈRES' MENU, ALSO A DRAMA, IS DIVIDED INTO FOUR SCENES WITH THE RHYTHM OF THE MEAL. The first part covers most of the signature dishes, the second part is the dishes that stimulate creativity, the third part is desserts, then the wine list, and finally the limited-time art crossover works.

You can follow the chef's rhythm or explore the menu freely, there is no set menu, only the freedom and deliciousness of what you want.

In the world of Jérôme, there are no boundaries to creation, and 30+ years of kitchen experience and inspiration gathered from traveling around the world have become the infinite motivation for his creation.

He is also very good at discovering high-quality Chinese ingredients, such as Yunnan caviar, malantou, cocoon white, and bean seedlings, which often appear in his works.

Before creating a new dish, Jérôme draws it into a manuscript, and in the process of drawing, he imagines the taste of the dish in his mouth, feels the delicate balance in it, and when the drawing takes shape, the recipe of the dish naturally comes out.
