Every year in winter, Qinghai countryside will always set off a pickled sauerkraut boom, buy cabbage, prepare a large tank, pickle a large tank of sauerkraut, place it in a cool place, and when the pickle is just right, take out some, with artichoke noodles to fry a plate of sauerkraut vermicelli, the taste always reminds people of their hometown.

Nowadays, eating sauerkraut in the summer is nothing new. In early summer, in the sauerkraut factory located in Zhigou Village, Gonghe Town, Huangzhong District, Xining City, a strong sauerkraut aroma came to the nose, encapsulating fermented sauerkraut to make the population water.

"Our village is a big vegetable growing village, there is always surplus cabbage every year, in order to solve the slow-selling vegetables, we have set up a sauerkraut factory, the maximum pickling scale can reach 20,000 kilograms." Ou Yongsheng, secretary of the party branch of Shangzhigou Village, said that at the beginning of the establishment of the sauerkraut factory, enthusiastic villagers would always come to help, and everyone hoped that the sauerkraut factory could lead the big guys to broaden the channels for getting rich.

Shangzhigou Village, which has always been the main force in vegetable planting and supply in Gonghe Town, often has been hit by the lack of fixed sales channels. In order to break the single development model and activate the new momentum of rural revitalization, in 2019, the party branch of Shangzhigou Village, with the help of the village-based task force, widely solicited the opinions of party members and the masses, and through market research, won 500,000 yuan to expand the village collective economic funds and 200,000 yuan to the eastern and western poverty alleviation funds, and built the sauerkraut factory in Shangzhigou Village.

Ou Yongsheng introduced that the sauerkraut factory has a construction area of 300 square meters and is artificially pickled by traditional large water tanks. In order to maximize the benefits of the sauerkraut factory, the village party branch combined with the actual situation, established a "4+" industrial model with "branch guidance, party member linkage, farmer participation, and professional cooperative operation", and party members took the lead in signing vegetable supply agreements with the cooperative to ensure the orderly operation of the sauerkraut factory, and gradually formed a sustainable development pattern of "party member demonstration and farmer participation".

Talking about the original intention of building a sauerkraut factory, Gao Zhiqiang, first secretary of Shangzhigou Village, said that Shangzhigou Village has no cattle and sheep industry, no good tourism resources, only vegetable output is relatively optimistic, then it is necessary to make a fuss about vegetables, and increase the village's collective economic income by pickling and selling handmade sauerkraut by farmers. But it is easier said than done, after the completion of the sauerkraut factory, the first batch of sauerkraut almost rotted in the tank because there was no suitable sales channel.

In order to smooth the sales channels of sauerkraut, members of the party branch of Shangzhigou Village and members of the village-based task force discussed with the person in charge of the cooperative and decided to send the sauerkraut produced to the canteens of major units in the form of tasting to obtain recognition. At the same time, members of the two village committees went to the morning market in Xining to communicate with vendors and talk to citizens to understand the demand for sauerkraut.

Gao Zhiqiang said that after two years of exploration and improvement, the sour and delicious sauerkraut has been well received, and sales orders from various units have also followed, successfully driving the village's collective economy to increase income by more than 100,000 yuan. "Thanks to the sauerkraut factory in our village, otherwise the few acres of cabbage I planted last year would have rotted in the ground." Zhang Haimei, a big planter in Shangzhigou Village, said.

"Everything is difficult at the beginning, Shangzhigou Village sauerkraut factory is still in the early stage of development, but we believe that as long as we are willing to fight hard, with the high-quality vegetable sources and high-standard pickling in the village, the sales prospects will definitely get better and better." Ou Yongsheng is full of confidence in the future of the sauerkraut factory.
