In the face of such a large and meatless part of the cow's hoof, in the past, it was left as an "abandoned thing", but it was a pity to directly abandon it, so some industrious and intelligent Fuxi people began to try to marinate the cow's hooves through brine, and they did not expect that the beef hooves with rich gum and strong halogen flavor had become an excellent appetizer, and the "abandoned things" had also begun to become a rare delicacy!

Materials
1 beef trotter, 3 tablespoons of light soy sauce, 3 tablespoons of dark soy sauce, 2 tablespoons of salt, 1 tablespoon of Fuxi rice wine, 1 tablespoon of Fuxi rice vinegar, 1 tablespoon of sugar, 1 piece of ginger, 3-4 dried chili peppers, 1-2 star anise, 3 slices of fragrant leaves, 1 piece of cinnamon, 2 pieces of angelica root, 1 handful of coriander, 5 fresh peppers, 3 shallots, 10 garlic.
How to do it
1. After the water is boiled, the blood foam of the cow's hooves can be basically boiled after boiling on high heat for about 10 minutes.
2. Remove the hooves, rinse quickly with cold water and rinse off. Pour in clean cold water, no more water than the cow's hooves.
3. Add soy sauce, soy sauce, salt, sugar, ginger, dried chili peppers, star anise, fragrant leaves, cinnamon and angelica root to a pot, bring to a boil over high heat and simmer for 1.5 hours.
4. After an hour and a half, the hooves of the cow have been stewed and the color has turned red. Turn off the heat and continue to soak the hooves in the marinade for half an hour to an hour.
5. Scoop out the hooves and follow the skin under the trotter slices.
6. Heat the pot, pour in the vegetable oil, when the oil temperature is 50% hot, pour the beef trotters, ginger pieces, millet pepper, garlic into the pot and stir-fry, add soy sauce, Fuxi rice wine, rice vinegar, pepper, salt, chicken essence, water, high heat and cook for 10 minutes.
7. Fill the hooves of the cow and you're done.

In fact, there is almost no meat on the cow's trotters, and nibbling on the cow's hooves is mainly to experience a kind of nibbling style, tasting its rich brine aroma. The most important thing to miss is that after nibbling on the bone, you also have to suck the juice in the cow bone, which is a mixture of brine and the fresh aroma of bone marrow, the taste is slightly salty, but it is very suitable for wine. Even the remaining brine at the bottom of the plate does not have to be wasted, poured into the rice, it makes the rice full of brine flavor, quite appetizing.
