Celery Highball

2 ounces Peat Barreled Big Gin
2 oz celery syrup (with instructions)
soda water
Pour soda into a full cup and garnish with lemon slices and celery. This wine uses aged barrel Gin, which adds layering to this fresh flavored highball. If you're not in a good position to make celery syrup, you can also use celery-flavored sodas such as Dr Brown's Cel-Ray.
Celery syrup Preparation: Heat 2 parts sugar and 1 part water in a pot over medium heat until the sugar is completely melted, crush 2 tablespoons of celery seeds (using a grinding bowl or grinder) and add to stir, add some additional whole celery seeds to taste to the appropriate flavor, turn off the heat and cool before bottling.

1.5 ounces BLANCO TEQUILA
0.75 oz celery juice
0.5 oz lemon juice
0.5 oz honey
2 drops brine (1:1 ratio)
Mix all the ingredients and shake, strain through a strainer, pour into a cocktail glass filled with ice cubes, and garnish with a few chilli rings. The wine is an adaptation of the classic cocktail Margarita, and the addition of fresh celery juice and salt adds a salty flavor to the wine.

2 ounces CHARANDA BLANCO
(A Mexican rum that can be replaced by a sweeter Rum)
0.5 oz Dolin Dry Misi
0.25 oz agave syrup
2 dashes (about 1.2ml) SCRAPPY's celery bitter extract
2 dashes (about 1.2ml) ANGOSTURA bitter essence
After mixing all the ingredients into a mixing cup, pour into a classical cup filled with large square ice and garnish with a slice of lime skin. When Charanda and Dry Mises are mixed, they create a smooth finish with herbal flavors, and the addition of celery bitter essence adds freshness and layering.
Salt & Vinegar Martini
Salt vinegar martini
2 ounces vodka
1 ounce can of olives in brine
0.75 oz Dry Misi
2dashes celery bitter essence
1 pinch of salt
Mix all the ingredients into a mixing cup, then pour into a cocktail glass, garnishing with a small piece of pickled cucumber and some chips attached to it. A little bit like dirty martini, but salty style.
