The difference between raw and cooked

Lately I've been really addicted to drinking Pu'er tea. Originally a Yunnan person, this is probably also the fate that should be deserved. Recently, I have a little experience in drinking tea, and write a small article to remember it.

Pu'er tea is very rich, just like coffee or red wine, different production areas, different years will affect the taste of tea.

First, let's briefly introduce the six major production areas of Pu'er tea:

1, Yiwu tea area: including Youle, Gedeng, Mangzhi, Barbarian Brick, Yibang, Yiwu these six major mountains, also known as the six ancient tea mountains. The tea in the Yiwu tea area has a honey flavor orchid fragrance, and its ancient tree tea has a woody flavor orchid fragrance, which belongs to the sweet tea area.

2, Menghai tea area: including Nannuo, BanZhang, Brown, Mengsong, Bada, Jinghong and other mountains, the tea here, characterized by wild chrysanthemum fragrance, it belongs to the sweet and bitter tea area, the change of its tea is from strong, bitter to soup full, high aroma, tea strong, slightly bitter.

3, Pu'er tea area: including Jingmai, Jinggu, Jingdong, Bangwei, Nanqiao, Wuliangshannan, Ailao Mountain, Bitter Bamboo Mountain and other mountains, also belongs to the sweet and bitter tea area, with rice and flower fragrance, tea is high but should not be stored for too long.

4, Lincang tea area: including Mengku, Iceland, Xigui, Fengqing, Shuangjiang, Yongde and other mountains, tea is fierce, thick, aromatic. Among them, Fengqing black tea is more famous, Icelandic and Xigui tea taste bitter after the sweet back obvious, if stored for a long time, the tea taste will have a richer aroma change, the taste will tend to be soft.

5. Dali Tea Area: including Wuliang Shandong and West, Heilongtan, De'an, Nanjian and other mountains. Most of the Dali tea area is a new tea garden, which is fruity.

6. Baoshan Tea Area: Including some hills in Baoshan, Tengchong, Longling, Changning and other places, mainly making Dianhong, Dianqing and some Pu'er loose tea.

The difference between raw and cooked

Pu'er tea is divided into raw tea and cooked tea, both raw materials and the main production methods are roughly the same, the biggest difference is that the production is cooked tea when there is more than a "Wo Dui fermentation" program, because many tea customers like Pu'er tea after a long time after the natural fermentation of the taste, so you can use artificial methods to ripen it in advance, if you can wait, raw Pu good preservation for 5-10 years will also be naturally transformed into mature Pu.

Simply put, raw tea is closer to green tea, catechins and tea polyphenols content is higher, so more for milli fragrance, floral fragrance, fragrance, chestnut fragrance; because the active ingredients are more, can clean the intestine, there is lipid-lowering, refreshing, antihypertensive and weight loss effect, but not suitable for insomniacs, cold and fever, gastric ulcer patients, pregnant women and other people to drink; and cooked tea is more inclined to black tea, black tea, tea polyphenols and other active ingredients are reduced, but theaflaxin, nitrox, cellulase, pectin decomposition enzyme and other microorganisms have increased, the sense of smell is mostly bean fragrance, Chen Xiang, Jujube incense, camphor, in addition, can reduce lipids, blood pressure, prevention and treatment of arteriosclerosis, prevention of constipation, diuresis, stomach, anti-aging, more suitable for middle-aged and elderly people and stomach cold and other people to try.

Personally, I think that tasting raw tea is like looking at young people, the smell is fragrant, more fierce and rushing, the irritation is also stronger when entering, but the bitterness and sweetness are clear, just like the kind of girl or guy who can be remembered at a glance, doing things and talking with a temper, but doing things cleanly and neatly, that is, making people feel that there is a spirit, a look sometimes knows that it is not in line with the film; and drinking cooked tea is like knowing an elderly man, will not come up to you to dig out the nest, you have to taste the story behind the people, Everything can leave three points of leeway, that is the gift of time and the polishing of life, everything is so restrained and subtle, the main thing is that the product is mellow and smooth.
