Linxia people are very particular about making hair, you have to use fresh whole lamb, take out the sheep intestines after many processes to wash and set aside, and then chop the heart, liver, waist and carefully selected meat, add chopped onion, ginger, salt, pepper and other seasonings to make a meat filling, into the intestine, steamed. When serving, fry in an iron pot with oil until slightly yellow, serve in a bowl, pour garlic paste, chili oil, and old vinegar, and the color and flavor are complete.

The Linxia people mainly focus on pasta, and the most popular of them are all kinds of noodles. Hezhou old stir-fried is Hezhou old fried noodles, with lamb minced lamb, noodles, green onions, garlic and other main raw materials, and fried together with the noodles. It was popular in the 80s and 90s, and was replaced by riverside noodles in the late 1990s, and in recent years it has returned to the public's vision again, gradually returning to the Linxia area. When making, mix the flour with boiling water, knead and roll it out, the diameter varies, generally between 10-20 cm, mostly round, requiring two skins. Make a filling made of the finest brown or white sugar, peanuts, walnuts, raisins, roses, date paste, butter or mutton fat and spread out between the two loaves. Pan fry in oil and keep turning until brown and crispy.
