Cordyceps flower duck soup preparation
Ingredients: net duck about 1000 g.
Ingredients: 100 grams of lard, 50 grams of ginger, 50 grams of cooking wine, 30 grams of chives, 10 grams of cordyceps flowers, 10 grams of goji berries, salt to taste.
Here's how:
1. Remove the old duck fluff and hair root, cut into pieces and set aside.
2: Put the old duck meat into the pot and add an appropriate amount of water to submerge, add a little cooking wine to blanch the water, skim off the foam after opening the pot, blanch the water for two minutes, take out and rinse with warm water, set aside.
3, add 100 grams of lard to the wok, put in the cracked ginger pieces 50 grams, after the lard melts, put in the processed duck meat pieces, stir-fry the duck fat over low heat and cook 50 grams of cooking wine, pour in the prepared boiling water, boiling water about to submerge the duck meat with one finger. Heat on high heat for about 10 minutes, then change to low heat and simmer for about 2.5 hours after adding an appropriate amount of refined salt, then add 10 grams of cordyceps flowers, 10 grams of goji berries, 30 grams of chives, and simmer for 5 minutes on low heat to get out of the pot.
Note: To make the duck soup fragrant, lard and boiling water are the key.
