homework? mashed shrimp soup
1.prepared fresh shrimps 500g or lobster.shell off,dress off,guts off.
2.put and mountained all of dressed shrimps on a cutting board.
pressed all shrimps on China knife. then,mashed.
or ,mashed by a machine.
3.mixed mashed shrimps with seasoning in a Mid size of bowl well by chopsticks.
salt 1.5g
say sauce 3 t spoon
starch powder 15g
wine 8g
ginger juice 10g
4.put the mashed shrimps into a pipe bag.
cut a cornor of this bag.resting.
5. boiled cold water= 3.5x200g mashed shrimps on mid fire.
6.squeezed mashed shrimps into water here,be shrimp balls,better.
7.kept boiling for 3 min,after
added a pinch of seaweed 20g,
spring onion pieces 10g.
salt 1g
ginger slice 20g
8.well done when all of shrimp balls afloated on the surface of soup.
9.fire off.
poured well done shrimps ball and its soup together into a soup bowl(s).
10.served it as hot soup with rice , fried vegetables,better.
in spoon,chopsticks.
11.next time,D.I.Y 2 KG mashed shrimp.seperated into 5 - 8 portions.
5- 8 pipe bags
