history

In 1939, a man named Bian Yongsheng bought the "Snow Garden" and opened a shop in the location of the current "Qingyun Building" on Gongyuan West Street, officially named "Yonghe Garden", which means "forever harmonious and angry and rich", covering an area of about 100 square meters. In the early days, there were three bungalows, one rented out to open a tea stove to sell tea, one rented a small hotel, and the owner of the small courtyard bian ran it himself, selling burnt cakes and dried silk. After several years of painstaking management, starting in 1942, Boss Bian reclaimed the rental house, unified the refreshment business, and hired Yin Changgui, a noodle chef, to preside over the production of dim sum at the shop. At this time, the blanched silk and shortbread of "Yonghe Garden" have been quite influential in the Confucius Temple and are well-known in Jinling. The dry silk operated by the general refreshment club is boiled dry silk from Yangzhou, and the hot drying of "Yonghe Garden" is not only cut as fine as a cotton thread, which can be called a needle, but more characteristic is that the boiling water invades and burns several times, without a little bean smell, and the mouth feels soft and flexible. "Yonghe Garden" of the baked cake is more distinctive, the general store's baked cake crisp and oil noodles two or eight open, "Yonghe Garden" shortbread is "three seven oil noodles, four doors wrapped in puff pastry", the variety will change at any time, a total of more than 20 varieties. Because of the golden color of the baked cake, it is known as "crab shell yellow". After Master Yin Changgui came to the shop, he added some Yangbang snack varieties, such as three buns, sad green roasted buns, crystal buns, mille-feuille oil cakes, crab yellow buns, small dumplings and dozens of other kinds, and the business was very prosperous. After the victory of the Anti-Japanese War, with the expansion of business in 1946, "Yonghe Garden" was rebuilt into a two-story building, with a business area of more than 270 square meters and more than 100 small square tables.

Celebrity origins

Historical celebrities with Yonghe Garden

In its development history, YongheYuan has also formed indissoluble relationships with many celebrities. [1]

Zhu Ziqing loves Yongheyuan baked cakes the most

The "old Nanjing" who is familiar with Yonghe Garden knows that among the eight best of Qinhuai, there are dried chicken juice and crab shell yellow cakes in Yonghe Garden, but few people know that these two kinds of food have even achieved the Chinese prose double bi "Qinhuai River in the Shadow of Paddle Sound and Light". At dusk in August 1923, the modern prose masters Zhu Ziqing and Yu Pingbo traveled to the Qinhuai River together, because they loved the refreshments of Yonghe Garden, they did not forget to eat snacks in the Snow Garden (Yonghe Garden) before the tour, "After eating a plate of dried tofu shreds in the tea shop, two burnt cakes, they stomped on the painting boat parked in front of the Confucius Temple with crooked steps, and lazily lay down on the rattan chair." The steamy Jiangnan is still hot in the evening..." The dried tofu silk and burnt cake mentioned by Yu Pingbo in "The Qinhuai River in the Shadow of the Paddle Sound and Light" are from the Snow Garden.

Zhu Ziqing was even more obsessed with the baked cakes of Yonghe Garden, and three years later he said affectionately, "I think sesame baked cakes are good, a kind of long round, just out of the fire, both fragrant, crispy, and white..." The baked cakes of Yonghe Garden are depicted beautifully.
