In this competition, the contestants from various counties (cities, districts) in Sanming City will take out ten dishes with the most local characteristics based on one ingredient, and bring everyone a feast of Sanming local cultural characteristics with "complete color and flavor". At the scene of the competition, the contestants in Shaxian District are methodically processing the ingredients, from the horn to the tail of the cow, from the head of the cow to the hoof, from the beef to the bone, the contestants take the method of scalding, frying, stewing, steaming, boiling and other techniques for cooking, fully demonstrating their skillful cooking skills.

Under the skillful hands of the players, beef tendon stewed clear spring, beef marrow red mushroom bud, bull whip fighting phoenix, cattle luck long and other cattle series of food that symbolize good omens were presented in front of everyone's eyes, each with its own characteristics, aromatic overflowing, mouth-watering, attracting many viewers to stop and watch.

At the serving ceremony, the Shaxian Whole Cow Feast simulated the traditional way of serving food in Shaxian County. With the sound of a gong and drum, the head dish placed on the shelf, "Ox Luck Is Just Head", was lifted up to the table, implying that the next year will be the head of the cattle and open the door. The staple dish "Cattle Luck Is Long" selected for the last dish, echoes the old saying "Cattle Luck Starts from the Head, Cattle Transport Is Long" echoes the head dish "Cow Luck is the Right Head", saying that the whole cow feast is the most "Shaxian taste" blessing for diners.

The Sanming City Local Specialty Food Banquet Cooking Competition is not only an important sub-event of the 17th Cross-Strait (Sanming) Forestry Expo, but also an important opportunity to promote the local specialties of Sanming City and enhance the development of publicity and display. After fierce competition and comprehensive evaluation by the expert group, the cooking competition ranked third in the total score of "Whole Cow Feast" in Shaxian District and won the second prize of "Mingwei Full Banquet Award". "Ox Transport Is the Right Head" won the first place in hot dishes. The first 50 dishes of Sanming City were shortlisted for the "Mingwei Specialty Award", of which six dishes selected by Shaxian District won the "Mingwei Characteristic Award".

Shaxian people have long had an indissoluble relationship with cattle. Shaxian Whole Cow Feast originated from the sacrifice of the Song Dynasty, according to records, Shaxian Xiamao Town Hong Mao, the ancestor of the Hong surname, served as a lieutenant in Shaxian County in the Southern Song Dynasty, and brought the sacrifice custom of "you spring cattle" in Gannan into Xiamao. In the era of material shortages, the cattle after the sacrifice evolved into the food of the local villagers to receive the blessings of the gods, and later gradually evolved into a table delicacy. Nowadays, whenever Xia Mao Town celebrates and invites guests and friends, the whole cow feast must be indispensable on the table, which has also become a local tradition.
