In the autumn of October, it is a good time to eat crabs, and for the annual "National River Crab Competition", Fu Jun, president of the Shanghai Haipai Cuisine Culture Research Institute, and Professor Chen Shunsheng of Shanghai Ocean University have begun to get busy again.

Taste of Shanghai 丨 In addition to Yangcheng Lake, where are the good crabs?

Twenty years ago, Fu Jun entered the food circle as a "layman", and it was also at that time that he and hairy crabs formed an indissoluble relationship. "The scientific name of the hairy crab is the Yangtze River system Chinese river crab, it is out of the Yangtze River estuary, Chongming, Hengsha, Changxing three islands, it is there to breed seedlings, that is, if we say that we make an "identity card" for the hairy crab, its place of origin is Shanghai. Shanghainese are the ones who know best how to eat hairy crabs, there's no doubt about that. Fu Jun said so.

Taste of Shanghai 丨 In addition to Yangcheng Lake, where are the good crabs?

Hairy crab seedlings are planted at the mouth of the Yangtze River, and the hairy crabs will migrate along the Yangtze River during the growth period, and the first lake suitable for its growth on the migration route is Yangcheng Lake, so the hairy crabs in Yangcheng Lake have always been a strong symbol of hairy crabs. The thin flesh of the hairy crab shell of Yangcheng Lake is delicate and sweet, but it also has a disadvantage, because the shell is thin, so it does not grow much. Therefore, in order to find big crabs and good crabs, Fu Jun and Shanghai Ocean University jointly held a national river crab competition from 2007, hoping to find a large and high-quality hairy crab. Hairy crabs in other production areas such as Baoying Lake, East Taihu Lake, Juntian Lake, Goseong Lake, Wuchang Lake, and Hongze Lake have won awards and entered the ranks of high-quality hairy crabs, enriching people's choices. The river crab competition not only subverted people's impression of "non-Yangcheng Lake, not big hairy crabs", but also excavated more high-quality crabs from different origins.
