In October 2021, Consumer Reports conducted a statistical analysis of the results of the pot and pan sampling of market supervision departments at all levels across the country in the past five years from May 2016 to May 2021.

The results showed that a total of 158 batches of pots were found to be unqualified, and a total of 8 unqualified indicators were found, including the total number of colonies, coliforms, peroxide value, aflatoxin B1, acid valence, aluminum, sweetener and lead.

Among them, the total number of colonies and coliform bacteria are the main reasons for the failure, and their proportion in the total number of unqualified indicators reaches 41.8% and 29.9% respectively, indicating that the health problems in the production of the pot are more serious.

In terms of brands, the well-known Wolong, Jiayuan, Zhuge Lady, Amber, Wanmuyuan, Yiren Hong, Saliva Baby, Silly Second Brother, Huang Laowu, etc. have all been detected as unqualified products, among which Wolong, Jiayuan, Zhuge Lady, Amber, etc., which have large sales on the e-commerce platform, have more unqualified times.

The results showed that there were a total of 8 unqualified indicators, including the total number of colonies, coliforms, peroxide value, aflatoxin B1, acid valence, aluminum, sweetener and lead.

Among them, the total number of colonies exceeding the standard is the most prominent problem in unqualified products, and a total of 74 batches were found, accounting for more than 40% of the total number of unqualified indicators, reaching 41.8%.

Pots and pans are foods rich in starch, protein and oil, which are very suitable for the growth of microorganisms, so the bacteria in them may multiply faster, reducing the safety of food.

The total number of colonies is indicative of microorganisms, not pathogenic bacteria. It is mainly used to evaluate the cleanliness of food and reflect whether the food meets the hygiene requirements in the production process.

The National Standard for Food Safety Puffed Food (GB 17401-2014) stipulates that the total number of colonies in a sample of Guoba (puffed food) shall not exceed 100,000 (100,000) CFU/g, and at least 3 test results shall not exceed 10,000 (10,000) CFU/g.

If the total number of colonies exceeds the standard, there is a greater hidden danger to its safety. Exceeding the total number of colonies will accelerate the spoilage of meat products, destroy nutrients, make them lose their edible value, and even cause vomiting, diarrhea and other hazards.

In general, the reason why the total number of colonies exceeds the standard may be the high initial number of colonies of raw materials, or the sanitary conditions of the production and processing process may not be strictly controlled by individual enterprises as required.

The National Standard for Food Safety Puffed Food (GB 17401-2014) stipulates that the results of 5 tests of coliform bacteria in a sample of pot (puffed food) shall not exceed 100 CFU/g, and the results of at least 3 tests shall not exceed 10 CFU/g.

The results showed that a total of 53 batches of unqualified pots and pans exceeded the standard of coliform bacteria, accounting for 29.9% of the total number of unqualified indicators.

The Northern Halal Spicy Pot (2016/4/1,200 g/bag) produced by Huxian North Special Food Factory in Xi'an City has 5 coliform test results of 1300, 4100, 960, 930, 10000 CFU/g, all of which exceed the maximum standard limit, and the maximum exceeds the standard by nearly 100 times.

Coliform excess may be caused by contamination of the processing raw materials and packaging materials of the product, or the pollution of the product by personnel, tools and other production equipment, the environment during the production process, and the incomplete sterilization of the product with sterilization process.

The results showed that a total of 15 batches of pots were found to have exceeded the standard of aflatoxin B1, accounting for 8.5% of the total number of unqualified indicators.

Consumers need to be reminded that if the long-term intake of this aflatoxin exceeds the standard of the pot, it will cause certain harm to health, such as chronic toxic effects, mainly manifested as chronic liver damage and induce liver cancer and other malignant tumors of the digestive system.
