Although there are many precious things such as bear paws and deer tails, there are many foods and dishes that we are familiar with. However, "Jiangmi stuffed duck" seems to be something we don't know, and a friend (a cross-talk fan) asked me a few days ago. This has the need for explanation.
Let's start with "Jiangmi". "Jiangmi" is actually glutinous rice, that is, glutinous rice commonly used in the southern region to make rice dumplings and brew rice wine, named for its soft glutinous rice. But glutinous rice is only the name of the south, and the north is not used much. The north calls it "Jiangmi". Why? Because the north basically does not produce glutinous rice, the glutinous rice they use is produced in the south, that is, the Jiangnan region. Therefore, the "river" of "Jiangmi" is a regional logo.
The structure of "regional acronyms" + "food names" is common.
For example, "mushrooms", that is, mushrooms produced in Zhangjiakou, because of their mellow aroma, are different from other origins, so they are called "mushrooms".
Another example is "Longjing Tea", which is produced in Longjing, West Lake.
Another example is "cloud leg", that is, Yunnan ham.
There is also "Jinhua ham", that is, ham produced in Jinhua, Zhejiang.
"Ejiao" is also counted, that is, a kind of gel produced in Dong'a, Shandong Province, which is boiled with donkey skin for nourishment.
Let's talk about "stuffed duck". "Stuffed duck" or "let duck", this name at least in the Qing Dynasty. Similar "let chicken", "let lotus", "let pepper", or "stuffed chicken", "stuffed lotus", "stuffed pepper". The Famous Yi Scholar Jiao Xun's "Yi Yu Lu" of the Qing Dynasty recorded the story of "let the lotus, let the duck, and stuff the chicken" on the table, and the guests laughed at "let the dish be the same as the same" but did not know the origin of the dish name. He then explained "stuffed vegetables".
Why "brewing" is written "let", it is easy to see the two words written in traditional chinese. "釀" and "攘" are all derived from "襄", because the overlapping rhymes can be passed. Jiao Xun explained that the word "Xiang" has the meaning of wrapping.
For example, "瓤" is a fruit wrapped in something.
Such as "釀". The Shuowen says: "釀, 酝也". And "酝" and "yun", "缊" and other homologous origins, but also has the meaning of wrapping.
Such as "inlay". "Sayings": "As a type of midgut also". "Interpretation of the Name": "Central Inlay". Folklore says "gold inlaid with jade", "inlaid" is wrapped in objects.
Such as "holding", forbearance, relaxation is an extension of the meaning of "wrapping".
Such as "駟". The Book of Verses: "Four horses drive, two serve the xiang". Among them, "Xiang", later "Jun". The four horses refer to the two horses and the two horses, and the horse is the horse of its main power, which is located in the middle of the two horses. It can be seen that there is also a wrapping meaning.
Naturally, "stuffed (brewed) duck" also means wrapping, that is, stuffing the duck's belly with food. Others such as "stuffed chicken", "stuffed lotus", "stuffed pepper" are no different.
In this way, the "rice stuffed duck" is to stuff the duck's stomach with glutinous rice. It is probably steamed, or a dessert commonly found at a feast, in which the pumpkin is hollowed out and steamed with glutinous rice. As for "stuffed vegetables", it is the representative of Hakka cuisine. The industrious and intelligent Hakka people have brought "cooking" to the extreme, and it has now become a major tourist highlight.
There is a view in Mencius that "food color is also", and indeed, eating and wearing daily necessities is indispensable for human beings. In the continuous development and progress of society, eating and wearing daily use has gradually become a culture. This cultural evolution is manifested in language, as long as we are good at development, we can find clues to the flow of cultural development. Mr. Chen Yinke said that "any explanation of a word is to do a cultural history", and it is true that traditional culture needs us to jointly protect and explore.
