1. Steamed Kaiping fish
Method:
Prepare a fresh fish, remove the guts, scales, fins, rinse and drain. Then cut off the head of the fish and slice the rest of the parts, but be careful to cut the abdomen into a state where the abdomen is connected and uninterrupted. Once it's done, cut off the tail again.
Then put the head of the fish in the middle, put the body of the fish around, hide the tail in the middle, and then put in the ginger slices and green onions.
After processing, put it in the steamer, steam on high heat for eight minutes, turn off the heat when the time is up, and simmer for five minutes.

2. Steamed pork ribs
Method:
Soak the ribs for an hour, then wash and drain. Then add cooking wine, salt, sugar, light soy sauce, dark soy sauce, chicken essence and mix evenly, marinate for half an hour.
Peel and wash the taro or potatoes, cut them into small pieces and lay them on a plate.
After the pork ribs are marinated, pour in the steamed pork rice noodles and stir well, let them sit for another 10 minutes, completely wet the rice noodles, and avoid steaming and pinching.
Finally, put the pork ribs on the taro, steam them in the pot for another hour, until they are soft and flavorful, and then they can be out of the pot, sprinkle with chopped green onions and chopped millet peppers to garnish.
III. Sugar Maruko
Method:
Rinse the pork, chop it into minced meat, add minced ginger, salt, five-spice powder, white pepper, light soy sauce, egg and stir well, then add pepper water and stir until strong.
After processing, add starch and oil and stir well. Heat oil in the pot, put the balls into the pot, fry until they float and take them out.
Put sugar, vinegar, starch and water in an empty bowl and stir well, and mix the sweet and sour sauce. Minced ginger and garlic are ready.
Leave the bottom oil in the pot, add the green onion and ginger and stir-fry until fragrant, then pour in the sauce and stir until thick. Finally, pour in the meatballs and stir-fry evenly, and you can get out of the pan.
4. Stir-fried beef with rice cakes
Method:
Put the rice cake strips in a bowl, soak them in water until soft, and then cut them into small pieces. Rinse the beef, cut it into small pieces, then add light soy sauce, egg white, starch and oil, mix well, and marinate for 10 minutes. Wash the onion and dice it and set aside.
Add oil to the pot, heat it and put in the rice cakes, remove them when cooked, and drain the water. Heat oil in another pot, add beef and stir-fry until it is broken.
Then pour the onion into the pot and stir-fry until fragrant, then pour in the rice cake and stir-fry. Finally, add sugar, black pepper paste, light soy sauce and stir-fry, then add a little hot water and cook until thick. After cooking, pour in the beef and stir-fry evenly, and you can get out of the pot.
5. Salt and pepper corn kernels
Method:
Clean the sweet corn kernels, add them to the pot and cook for another 3 minutes, then remove and drain. Then add the eggs and starch and stir well. Wash the shallots and cut them into finely chopped shallots.
Heat the oil in the pot, the amount is more, pour in the corn kernels, fry until the bottom is set, then stir-fry, add a little cumin powder, five-spice powder, pepper powder, salt and stir-fry evenly, you can get out of the pot, sprinkle with chopped green onions.
6. Dry pot cauliflower
Method:
Divide the cauliflower into small florets, wash twice and drain. Rinse the pork belly and cut it into thin slices.
Heat oil in the pot, add the meat slices and stir-fry the oil, then pour in the cooking wine and stir-fry, and add green onions, ginger and garlic to stir-fry to make the fragrance.
Then put in Pixian bean paste, hot pot base and stir-fry, then pour in cauliflower and stir-fry until eight ripe.
Finally, add light soy sauce, salt, sugar, and chicken essence and stir-fry until the cauliflower is broken, then add millet pepper rings and garlic sprouts, and you can get out of the pot.
7. Cold lotus root slices
Method:
Peel and wash the lotus root and cut it into thin slices. Then put boiling water into the pot, boil for two minutes, remove it, then pass through cold water, drain the water.
Put white sesame seeds, chili noodles and Sichuan pepper noodles in a bowl, pour in the hot oil and stir well, then add sugar, light soy sauce, oyster sauce, dark soy sauce, aged vinegar, salt and sesame oil and stir well.
Finally, mix the lotus root slices and sauce well, and then serve on a plate.
8. Spinach mixed with chicken
Method:
Rinse the chicken breast, put it in the pot, add an appropriate amount of water, then add cooking wine, ginger slices, green onions, and peppercorns, and cook until the chicken is cooked thoroughly.
Wash the spinach, cut it into small pieces, boil it in a pot with boiling water for half a minute, then squeeze out the water with cold water. Chicken torn into small strips.
Put the tahini in a bowl, add sesame oil and who to dilute. In another bowl, add sugar, white vinegar, light soy sauce and oyster sauce and stir well to taste.
