1. Cut the tea

Tea farmers cut the tea with branches and leaves, cutting it to a size of about 5cm;

2. Steam and stir well

Put the cut tea leaves into a large pot, the wood burns in the stove, the tea leaves are shrouded in mist, low temperature in the early stage, high temperature in the later stage, cooked over high heat until seven minutes ripe, and the heat induces the aromatic molecules in the tea;

3. Fermentation-wrapping-re-fermentation

When the fresh leaves lose their grassy flavor, the first fermentation begins.

The tea leaves are fermented together with the boiled water for about a week; Then turn the tea leaves over and evenly, wrap them on a hundred-year-old wooden building, the tea leaves gradually change from dark green to bronze, and the second fermentation begins, about a week.

4. Pour and knead

The tea leaves are evenly poured by the tea, gently pulled and pushed, kneaded, and the cord is gradually tightened;

5. Repression

Finally, it is put into a mold such as a stone nest or stone mound, and under the gravity of the mallet, the excess bitter water in the cells is sent, and the tea leaves are pressed into tea bricks of about 15×20×10cm.

The mallet interacts with the tea leaves, locking in the richer aroma of the tea and the tea, and this sweet taste has become the unique hallmark of Rongba tea.
