When Shanxi is mentioned, people think of the "acid" of old aged vinegar, and when they talk about Yuncheng, it is the "saltiness" given by the vast salt pans.
As a resource-based lake, Yuncheng Salt Pool was formed in the Quaternary Era of the Cenozoic era and is one of the three major inland salt lakes of sodium sulfate in the world. The earliest human use of salt ponds was to collect their naturally occurring table salt. According to legend, in ancient times, the Battle of Hanquan between the Yellow Emperor and the Yan Emperor and the Battle of Zhuolu in which the Yellow Emperor defeated Chi You both took place in Yuncheng Yanchi, both in order to compete for important salt resources.

More than 4,600 years ago, people dried salt here and transported it to all parties, and the word "salt city" Yuncheng was born. The salt pond covers a total area of more than 100 square kilometers, and in midsummer, people draw water from the solution pond to the salt pool, and when the south wind blows, salt flowers will be produced one day and one night. Locals call it "growing salt", and the tradition has remained unchanged for thousands of years.
In recent years, Yuncheng has implemented the "return of salt to the lake", stopped all industrial production within the protection area of the salt pond, and promoted industrial transformation and upgrading according to local conditions. Today's Yuncheng Yanchi has become one of the important areas for creating a demonstration area for ecological protection and high-quality development in the Yellow River Basin (Shanxi section).

There are countless cultural relics in Yuncheng. In Ruicheng Yongle Palace, people are attracted by the wooden ancient buildings here while sighing at the murals. One by one, the weight of the roof is accurately distributed to each load-bearing column, so there is a legend of "the wall does not collapse".
"Wan Rong has a flying cloud tower, half of which is inserted in the sky." The Feiyun Building in Wanrong County, Yuncheng, is extremely ingenious in design. This "China's first wooden building", "hand can pick the stars", together with Yingxian wooden tower, is called "South Building North Tower".
In Yuncheng, there is also a "mansion" - the Li Family Courtyard, the famous Jin merchant mansion, which contains 146 ancient houses, which has high cultural value and art appreciation value.

Shanxi Yuncheng is full of "Shaanxi taste"?
Yuncheng is about 240 kilometers from Xi'an, and just crossing the Yellow River can enter the Guanzhong Plain. Therefore, the living habits of Yuncheng people are also similar to those of Shaanxi people. I believe that many Yuncheng people have childhood memories, looking at the weather forecast based on Xi'an, most of them will choose Xi'an for play, shopping and studying.
Regarding food, Yuncheng people often explain that "Jinnan eats very badly" and "Shaanxi has a strong taste". That's right, Yuncheng has its own food philosophy.
I love buns and bread
Shanxi and Shaanxi are both well-known noodle provinces, and the noodles on both sides are unambiguous, to say that the noodles are played as art, you have to look at the steamed buns in Yuncheng.
In addition to the flower dumplings on it, Wenxi boiled cake is also the best in Yuncheng pastry. Lu Xun once mentioned in the article: I carried two packs of cooked cakes to see my friends.
Wenxi boiled cake has the reputation of "the king of cakes" in Shanxi. Yuncheng people often call "fried" "boiled", the boiled cake is wrapped with filling, the outside is stained with white sesame seeds, and a bite can pull out long thin silk, sweet to the heart.
In Yuncheng, "eating soil" may also be a sentiment. Stir-fried kichi with local white clay. Don't look at the dirt outside people's homes, it tastes crisp and nourishes the stomach and spleen.
Compared to noodles, Yuncheng people love steamed buns and cakes more. Triangular shortbread, semi-round cakes, green onion cakes... No matter what it looks like, crispy on the outside and tender on the inside is a constant feature. As for sandwiching meat, eggs, and spicy skewers, or eating cakes alone, it is rich and thrifty.
Many people may not know that Yuncheng people also eat mutton puff buns. Unlike Xi'an mutton puff buns, Yuncheng people first serve a bowl of steaming mutton soup, and then slowly break the bun into the soup, "Dié, a bowl, Mrs. Mei!" (Described as delicious, delicious)
