Compared to the real snowy shellfish, I am missing one thing - milk powder. After my cake was ready, it was covered with milk powder on all sides, which was a veritable "snowy" shellfish!
I think there is no "snow", it looks quite refreshing, and if you like it, you can add a step at the end!
The following is a detailed recipe and method, follow along, absolutely will not get lost!
Ingredients: 5 eggs (only 4 large eggs, just 150 grams of egg white), caster sugar (20 grams + 60 grams), milk 90 grams, vegetable oil 60 grams, low flour 80 grams
Filling: 200 g of cream cheese, 20 g of sugar, a little pumpkin puree, a little chocolate
Method:
1. Fresh eggs, preferably freshly taken out of the refrigerator freezer, egg yolks and egg whites are separated and placed in two different beaten egg bowls.
2. Add 20g caster sugar to the egg yolks and stir well.
3. Add milk and vegetable oil to the egg yolks and stir well.
4. Sift in the low gluten flour and stir.
5. Obtain a homogeneous and delicate egg yolk batter and set aside.
6. Add caster sugar to the egg white 3 times, use an electric whisk to beat at high speed, and reach the hook state, without being too hard.
7. Pick the meringue three times, mix the egg whites and egg yolks in a cut or tumbling manner to avoid defoaming, and pour the mixed batter into the meringue for the last time and mix well.
8. Finally, a homogeneous and delicate cake batter is obtained.
9. Place oil paper in a baking dish and pour in the cake batter.
10. Scrape the batter flat with a scraper.
11. Preheat the oven at 170 degrees for about 20 minutes. (Different oven temperature and time will be different, if it is steaming oven, try 150 ~ 160 degrees for 30 minutes)
12. After baking, remove the oil paper, invert the buckle, tear off the oil paper and cool.
13. Cut off the irregular parts around and use a round mold to cut out round cake slices. If you don't have a mold, you can also use a cup or bowl mouth or something.
14. I cut 8 small round pieces, just enough to make 4 groups of chicks. The rest of the scraps were eaten directly, the pieces around them were cut into squares, and I also made a few small shells of meat floss.
15: Next, make the filling.
I use cheese filling. 200 grams of cream cheese, also called cream cheese, add 20 grams of sugar and stir well until smooth. You can use an electric whisk or a spatula, and the sweetness I think is just right.
16: Take a slice of cake and spread the filling on the coloring side.
17: Cover with another slice of cake, you can make a total of 4 pieces.
If you have milk powder, you can dip it all around in a circle and have a hairy feeling.
18, the next step is the last step, drawing the eyes and mouth.
Eyes I use melted chocolate, mouth I use just made cheese filling plus babe pumpkin puree. Bebe pumpkin steamed, add a little bit of the cheese filling just leftover, mix it up, the color is yellow, just right.
19. Put the chocolate and pumpkin cheese filling into the framed flower bag, cut a small opening underneath, and you can use it.
20, with chocolate dot eyes, and then use cheese to draw the mouth, its mouth is a horizontal "U", very special look!
