The above five system versions are all official versions of the system, which can be upgraded by going to Settings - Universal - Software Update. If you've already upgraded to the RC version, you can only upgrade via the Ace Helper.
What's new in iOS 15.1?
The official version is the same as the iOS 15.1 RC Candidate Update, but with bug fixes and improvements. It also integrates all the features of the iOS 15.1 beta version.

Regarding the bug of special symbol cancellation, it still exists in the official version of iOS 15.1 and has not been fixed.
Regarding the issue of whether checkra1n jailbreak is supported, the actual test is still not working, and the follow-up needs to wait for the jailbreak developer to fix the compatibility with iOS15.
