In the twenty-eighth year of the Qianlong Dynasty, Zhu Yangmao, a Huizhou medicine merchant who was full of poetry and books and proficient in medicinal materials, came to Yanzhou Capital and found that Wujiapi wine could not only benefit the people, but also harbor unlimited business opportunities to be developed. Therefore, it was widely collected and studied the folk Wujiapi wine recipe, and the folk winemaking techniques and traditional Chinese medicine were skillfully combined, and finally the Yandongguan Wujiapi wine recipe, which is still in use, was finally formed. In 1942, Japanese aircraft bombed the capital of Yanzhou, and with the flooding raging, several large-scale Wujiapi distilleries in Yandongguan closed down one after another. After the victory of the Anti-Japanese War, Yandongguan Wujiapi Distillery opened and stopped. In 1948, more than a dozen shareholders tried to raise funds to resume production, but they were unable to do so due to social unrest and soaring prices. It was not until 1958, when the then Jiande County government established the Yandongguan Wujiapi Distillery, that Yandongguan Wujiapi Wine was able to resume large-scale production. In 1998, the distillery was renamed Zhejiang Zhizhonghe Liquor Co., Ltd. after restructuring.
Wujiapi is a kind of health wine, folk also called medicinal wine, in addition to the original wine that has been brewed, the most critical is the extraction of medicinal juice. The herbs are first selected, then mixed according to the recipe, and then the matched herbs are soaked in buckwheat wine for four consecutive processes. Soaking is not the end of putting the medicinal herbs in, but according to the different volatility, the size of the specific gravity, the shape, etc.
Wujiapi needs to add 29 flavors of Chinese herbal medicines, including angelica, jade bamboo, ginseng, Wujiapi, Dang ginseng, Shanna, Sha ren... "The most critical of which is the yellow gardenia containing pure natural pigments, and everyone usually sees the golden yellow color of Wujiapi poured into the bowl, which is the credit of Huang Gardenia." The picking of yellow gardenia is very exquisite, it must be carried out after the annual frost falls on the solar terms, and its color degree is not the best state one day earlier or one day later. Moreover, the shell and flesh color of the yellow gardenia are red, and the consistency of color inside and outside is the best product.
