哈哈，說到中國炒飯，我就不得不回答這個問題了。
在中國，炒飯絕對是一道值得一提的美食。
然而，炒飯對中國人的意義與其他國家的人有很大不同
在我們東南亞國家，包括我們新加坡、馬來西亞，還有泰國、印度尼西亞等我去過的國家。炒飯是一種正式菜肴（或主食），在各種層次的餐館出售，與其他菜肴一起擺上餐桌。我從小就是這麼了解炒飯的。

自從幾年前去了中國，見識了中國炒飯，加上和中國朋友交流後，我對炒飯有了新的認識。
炒飯在中國很常見，幾乎所有的中國人都吃過炒飯。然而，這并不是一道正式的菜肴。在重要的聚會和宴會上，中國人幾乎從不吃炒飯。
一位中國朋友告訴我，他記得十幾年前，家裡有剩飯的時候，總會把它做成炒飯來吃。原因是，扔掉剩飯被認為是“浪費食物”，這在道德和經濟上都是可恥的。
是以，炒飯在中國是一種“處理剩餘米飯的方式”。這被認為是一種節儉的行為，幾乎所有中國家庭都會這樣做。
即使到了現在，炒飯仍被視為“簡單又便宜的食物”。它們總是在一些簡陋的路邊小店裡制作和銷售，或者用路邊的推車出售。在我去過的中國城市，炒飯的價格一般在1.5-2美元左右。
有些中國人在工作繁忙、時間匆忙，或者生活中需要減少開支時（比如窮人或者學生），經常會吃炒飯。我在社交媒體上看到一個中國人寫道：“我最近的生活太不幸了，我經常靠炒飯、面條和蓋飯來解決我的午餐。”在我看來，他認為“炒飯和面條”就是“不幸”的象征。
但如果認為炒飯在中國是不好的食物那就錯了。
炒飯很少出現在高檔餐廳裡，它總是以簡單粗暴的方式出現在夜市、路邊小店、推車上。
廚師會把它放在一個蓋着塑膠袋的金屬盤上，或者幹脆放在一次性飯盒裡。客人們坐在簡單的桌椅上吃飯。
由于炒飯從炒熟到端上桌的時間短而快，是以中式炒飯在你面前常常顯得熱氣騰騰。他們稱之為“鍋氣”，是中國人衡量炒飯品質的重要标準。
成都路邊的炒飯車，有幾十種食材 。
僅僅因為它的粗糙和便宜并不意味着它的味道不好。相比之下，中國的炒飯品種數不勝數，而且大多都很美味。今年4月，我在成都路邊拍到了一輛賣炒飯的小車。這樣的手推車在中國很多城市随處可見。我問了下老闆，這輛不起眼的小車居然可以做24種不同的炒飯。
這就是我的“揚州炒飯”，我甚至能看到所謂的“鍋氣”
12元人民币買了一份“揚州炒飯”，據說是最傳統的炒飯。配上簡單的泡菜，就吊足了我的胃口，太好吃了！
第二天我吃了一盤“芹菜牛肉炒飯”，我在夜市上吃到了“回鍋肉炒飯”。
之後我又在一些小餐館嘗試了不同的炒飯，大部分都很好吃。我的一個中國朋友（客戶）聽說我連續三天吃炒飯時感到震驚。他告訴我：“偶爾吃一下還可以，長期吃炒飯，身體就會營養不平衡。”
果然，炒飯在中國人眼裡是一種不幸的食物，盡管它非常美味。

In a way, it is treated similarly as hotdogs in the US.
Decent street food, could be quite good when you need a quick bite, but hardly something one with order at a fancy restaurant.

鑊氣 is usually translated into English “the breath of the wok”, but the Cantonese pronounciation wok hei is already quite popular. People will be confused with “pot gas”.

Fried rice is sometimes served as a filler dish at the end of banquets in case guests have not had their stomachs full. Other ones are fried noodles and glutinous rice. But because they are fried in bulk, they lack quality.

Just like in the west chinese such as chinese chop suey or mix vege. Its supposed to be left over bit of veges thats a waste throw away and its been cook for home dishes.

I know many Chinese friends think it is unfortunate. But I really thought it was delicious.
Koreans even promote pickles as the supreme delicacy. Why should the Chinese feel it is unfortunate that they have such an abundance of fried rice?
