1. Separate the bone and flesh of the cinnamon fish.
2: Cut the fish into thin slices.
3: Fill the fillets with shallots, ginger, garlic water, cooking wine, pepper and mix for 1 minute.
4: (Fillets) Mix well with egg whites, add a spoonful of starch and set aside.
5: Add a little salt to the fish head, marinate for 5 minutes, add starch and mix well.
6: Slice the tofu and fry until golden brown.
7: Fry the fish bones until golden brown.
8: Stir-fry onion, ginger and garlic with water, add chicken juice, soy sauce and salt.
9: After the water is boiling, add tofu and fish bones, add cooking wine, cook over medium heat until the soup is thick.
10: Pour in water starch and chicken essence, plate, add shredded green onion and a spoonful of chopped pepper on the surface.
11: Pour an appropriate amount of water into the pot, add a spoonful of salt, a spoonful of oil, put the greens and blanch them and then put them on the plate.
12: Blanch the fillets in the water and place them on top of the greens.
13: Put green onion and garlic on top of the fish fillets, pour hot oil and drizzle with Tai Le steamed fish soy sauce.
Soak in water for a few minutes and drain excess water.
