Regarding the origin of smoked tofu, there is a folk legend: in the old days, there were many tenants in Confucius, among which there was a tofu household surnamed Han who lived in the northeast academy village of Qufu City, and his family sent tofu to Confucius for generations. During the Qianlong period of the Qing Dynasty, the brothers of the Han family each sent a tofu to Kongfu every day. One year, during the three volts, there was a cloudy day, and the tofu made by Han Lao'er's family was not sold out, and he was afraid of steaming, so he cut the tofu into many small pieces and hung it on the straw curtain. Who knew that his house accidentally caught fire, the curtain to dry the tofu was also burned, because of the cloud, the curtain was wet, some of the tofu pieces were roasted, and some were smoked brown. Han Lao'er was reluctant to throw away these tofus, so he took some and boiled them in salt water, and the taste was quite good. Therefore, he sent some such tofu to KongFu for Yan Sheng Gong to taste. Yan Sheng Gong asked the chef to put cinnamon, pepper, chili powder and other ingredients when stewing tofu, and after the tofu was stewed, it tasted very good. Since then, Han Lao'er has specially made and presented smoked tofu to Confucius, and smoked tofu has become a delicious dish in Confucius. Legend has it that one year the Qianlong Emperor came to Qufu, and the Confucius Government set up a tofu feast for the emperor, including a piece of smoked tofu. The emperor ate very deliciously and appreciated it.
Later, the practice of smoked tofu gradually spread among the people and became a unique local snack.
