Hongchuan Town, where Hongya County is located, covers an area of 79.24 square kilometers, has a permanent population of 80,000 people, but there are more than 200 mutton restaurants, which can be called a city of mutton restaurants. Eating bowls and bowls of lamb is the daily life of the Hongya people, and it is also a matter of entertaining friends from other places.
In all parts of Sichuan, there is a habit of eating mutton in the winter, I also grew up in this habit, folk have always believed that mutton can improve the ability to withstand cold, whether there is a specific effect is not too clear. There is also a folk saying that mutton is dry and can only be eaten in winter. The people of Hongya tell everyone with lamb restaurants all over the city: We in Hongya eat mutton all year round.
In June 2017, when we went on a business trip to Hongya, Wang Cheng, then chairman of the Hongya Photographers Association, asked us what to eat? I said you locals like to eat restaurants, not to the big restaurants. The result was a lamb restaurant on Xiuwen Road, named Lunxiang Lamb, and the owner was busy with a colander. When he arrived at the cauldron, Chairman Wang said loudly to the boss: "Boss, 6 bowls of lamb." "Most of the mutton restaurants in Hongya County are operated by Ming file, which is much earlier than the open kitchen required in the city now, and the advantages of Ming file are: you see that my ingredients are qualified, freshly cooked, such as fake package returns; there is also the boss from the opening of the restaurant is the image spokesperson, acquaintances come to say hello, appear kind.
Hongya Lamb Restaurant selects local goats, the meat is tender, not fishy, every day these open lamb restaurant owners, three or four o'clock in the morning began to wash and stew. Lamb with bones, into a large pot of simmering for more than 2 hours, before changing to medium-low heat, cook until the heat is fished up, guests come, weigh and slice, and then put into a colander into the pot to blanch. Guests wait here and bring themselves to their seats, both indoor and outdoor, and the outdoor seats are on the street, and most people choose to sit on the street to eat. Sitting on the side of the street, watching the people coming and going, a derivative of life, and then looking at the food in front of you: a bowl of clear and fragrant lamb, a bowl of evacuated white rice, a plate of dried peppers with dates and a small dish of pickles that are greasy, drinking soup and eating meat, and when the forehead is slightly sweaty, the stomach is full.

I don't like to eat in big restaurants and restaurants, I always feel that it is a standard dish, but there is no personality. Most of my local friends know my good habit of saving money for everyone and invite me to eat snacks. The first time I ate snacks in Hongya was estimated to be ten years ago, when local photography friend Kang Zhili took me to dinner and led me to a relatively remote side street, when there were no photos or records, I can't remember which one. I only remember that there was roasted blood, fresh and tender and hot, and there were other roasted vegetables and brine dishes, folk flavors, and I drooled in retrospect. In the future, every time I come to Hongya, as long as I have the opportunity, I will definitely eat snacks.
In 2020, Kang Zhili invited me to hongya for two days to play and talk about taking photos on Wawu Mountain. I said, "Taking pictures of the scenery is your local strength, I can just come and have a snack." "The snacks that Hongya people say are not noodles, tangyuan and the like, but small restaurants with mixed vegetables, roasted vegetables and stir-fried vegetables, the tables and stools are not high, sitting up a little bent and bent knees, but it does not affect drinking and chatting at all.
In September, finally arrived in Hongya, we went to the North and South Street to eat a restaurant called "Heiwa (a male character in the mouth, can't type out)" snack shop, at that time did not take pictures and did not record, to the meishan Writers Association vice chairman He Zeqiong teacher to consult to know the street name and place name. Writing this, I regret it in my heart, why didn't I take pictures at that time? At that time, everyone was chatting, eating and chatting when serving, the dishes were delicious, and I forgot to take pictures just by eating. If it weren't for the epidemic, I would really have driven to Hongya and eaten snacks. The buns on North and South Street were so delicious, there were people to pack from morning to night, when we left, local friends packed for us, came home, and the daughter who didn't like to eat buns also shouted delicious, drooling again in her imagination, this epidemic really made people a little painful.
