2. Then pour into the basin and add water to wash twice, put into the basin.
3. Boil water in a pot, add pig's trotters under cool water, add two slices of ginger, add a little cooking wine to remove fishy, and bring to a boil over high heat.
4. After the water boils, we turn the pig's trotters over and cook for about 3 minutes.
5. Skim off the foam on top with a spoon, then fish out and wash again.
6. Next, adjust a sauce, take a small pot, add two pieces of tofu milk, add 5 spoons of light soy sauce, 2 spoons of braised soy sauce, and then stir to bring it to a boil.
7. Prepare some large ingredients, cinnamon, star anise, red dried pepper, fragrant leaves, grass and fruits
8. Prepare a pressure cooker, add the pig's trotters, add the right amount of water, add the ginger slices and large ingredients, add a little high liquor to remove the fish.
9. Pour in the prepared sauce, add 2 tablespoons of salt, a few rock sugars, cover the lid, bring to a boil on high heat, change to low heat after gas, and simmer for 30 minutes continuously.
10. When the time comes, turn off the heat, continue simmering for 5 minutes, then deflate the pressure cooker naturally, open the lid to see.
11 With chopsticks, you can easily penetrate it, it has been very badly marinated, you can also continue to soak for 30 minutes to make the pig's trotters more flavorful, and then fish it out and put it in the basin.
