Every year in the freshman season, the canteen of Shanghai University will present a freshman gift full of warm love to the "newcomers" - "Shangda Cake".
On the cake, it is improved from the traditional Jiangnan dim sum "Dingsheng cake". In order to inherit the traditional Chinese food culture, Shangda Cake retains the traditional production process while improving, and the production process of "one mixing, two rubbing, three sieves, four presses, five steaming, and six knocking" has been poured into the long-term exploration and improvement of the master chefs. Among them, in the screening process, the fine sand is separated from the clump of rice flour with a fine grid, and this process must be repeated several times, otherwise the taste of the pastry will be affected. Lion's head
The lion's head, also known as the Four Happiness Balls, symbolizes festivity and consummation. It was originally a famous dish in Huaiyang, and after the improvement and adjustment of the chef, it has become a dish with a unique flavor of Shangda. As the first of the "Eight Major Pieces of Public Welfare at Shangda", Shangda Lion Head has been supplied in the canteen for 30 years and has always adhered to the public welfare price.
Shangda "Yuanyuan" lion's head material is selected from seven points of lean meat and three points of fatty meat, finely cut and coarsely chopped, the size should be like a grain of rice, so that the meat texture keeps a gap, fully contains juice, with green onion ginger, water chestnut and other materials, made into balls, first fried and then simmered over slow fire, wrapped in boiled viscous syrup, the skin is tender, the color of the meat balls is mixed with the fresh and crispy taste of water chestnuts, rich layers of taste, there is a unique taste.
Youth League
Although the Qingming Festival has passed for a long time, the Shanghai University Youth League still occupies a place in the top list of Shanghai University food, and it is a taste that many people will never forget.
