【Brewing】
Using the air drying process (Appassimento), the grapes are dried to form raisins for about 3 months, and then the raisins are pressed into juice. During the drying process, the weight of the grapes is reduced by more than 40%, so that the raisins are pressed with thicker juice and higher sugar, resulting in higher alcohol content and extremely rich flavor.
