Dairying, also called dairying, is a branch of agriculture that includes the raising, raising and utilizing dairy animals, mainly cows, for the production of milk and the various dairy products processed by it.
Milk consumed by humans is mainly produced by cows and buffalo. Goats are also an important source of milk in China, India, other Asian countries and Egypt. There are five main breeds of cows: Ayrshire cows, brown Swiss cows, Guernsey cows, Holstein-Fries cows (black and white flower cows) and Jersey cows. There are also dual-use varieties for the production of milk and meat, especially milk thorns and red ballots.

Guernsey cows originated in Guernsey off the coast of France. Guernsey cows are pale yellow with clear white markings, and the average fat content of this milk is about 4.8%, which is dark yellow.
The Holstein-Frisian breed originated in the Netherlands, it is a black and white color, the volume is relatively large, Holstein cattle produce more milk than other breeds, the average milk fat content is 3.7%.

Jersey cows originated in the British island of Jersey, and Jersey cows are yellow-brown with some white markings. They are the least produced of dairy products, but their milk is high in fat and contains an average of 5.2% milk fat. The highest protein content in milk was in Guernsey (3.91%) and Jersey (3.92%), and the lowest was in Holstein (3.23%).
Cow breeds are built up after years of careful selection and mating to achieve the desired type. Increasing milk and milk fat production has always been the main goal, although the goal often shifts to increasing milk and protein production. The yield per cow varies with many environmental factors, but the genetic background of the cow is extremely important.
